Here is some home made Mexican that tastes good and is actually great for you. High in protein, this is one the whole family will love.

Serves 2

Ingredients

  • 300g lean beef sliced
  • tomato
  • low fat grated cheese
  • 1/4 onion
  • salsa (whatever strength of spice you prefer)
  • 1/2 red capsicum
  • 2 multigrain mission tortillas
  • 1 lime

Method

  1. Heat fry pan and cook sliced beef and chopped onion and capsicum (approx. 8 mins)
  2. Heat tortillas in microwave approx. 30 secs
  3. Put beef and onions into tortillas and add toppings (spread across the 2)
  4. Top with cheese, salsa and lime juice
