Ham & Tomato Scrambled Omelette

Ingredients

  • 4 Egg Whites 
  • 1 Yolk
  • 30ml Skim Milk
  • 6-8 Cherry Tomatoes
  • 1 Spring Onion
  • 3 Slices of Ham
  • 2 Slices of Wholemeal Toast
  • Pinch of salt, black pepper and chilli flakes
  • Optional: 3 drops of hot sauce or BBQ sauce

Method

  1. Crack your eggs into a bowl, removing the yolk in all but one
  2. Whisk with a fork
  3. Chop the cherry tomatoes, spring onion and ham slices into small pieces
  4. Put your two pieces of wholemeal bread in the toaster
  5. Pour your egg whites and one yolk into a non-stick frying pan on medium heat, immediately after adding your cherry tomatoes, spring onion and ham slices
  6. Mix the ingredients using a wooden spoon whilst adding your skim milk slowly
  7. Continue to stir until the mixture scrambles
  8. Add the scrambled eggs onto your toast with salt, pepper and chilli flakes and the sauce as desired
