Here’s a delicious pub-inspired meal from Man Shaker Robert, who has replaced the chicken schnitzel in a parmy (or is that parma?) with cauliflower. This quick and easy meal requires just five minutes to prepare and another 30 minutes to cook, making it a really good option as a mid-week dinner. Plus, the cauliflower will ensure you get plenty of nutrients. 

Ingredients

  • One cauliflower, stem removed, cut into multiple 2cm steaks
  • 1 tbsp of olive oil
  • 2 x 140g tubs of tomato paste
  • 2 slices of ham
  • 1 cup shredded mozzarella cheese
  • 1 tsp oregano
     

Method

  1. Place your cut cauliflower steaks onto a tray and lightly coat them in olive oil.
  2. Season the cauliflower with oregano.
  3. Place your seasoned cauliflower into an air fryer set at 150 degrees for about 20 minutes, or until softened and starting to brown.
  4. Remove the cauliflower, coat it in tomato paste, place ham on top and sprinkle 100g of mozzarella.
  5. Place the cauliflower back into the air fryer at 150 degrees for about 10 minutes or until the cheese has melted and started to brown.
  6. Serve with a side salad.
