Here’s a delicious pub-inspired meal from Man Shaker Robert, who has replaced the chicken schnitzel in a parmy (or is that parma?) with cauliflower. This quick and easy meal requires just five minutes to prepare and another 30 minutes to cook, making it a really good option as a mid-week dinner. Plus, the cauliflower will ensure you get plenty of nutrients.
Ingredients
- One cauliflower, stem removed, cut into multiple 2cm steaks
- 1 tbsp of olive oil
- 2 x 140g tubs of tomato paste
- 2 slices of ham
- 1 cup shredded mozzarella cheese
- 1 tsp oregano
Method
- Place your cut cauliflower steaks onto a tray and lightly coat them in olive oil.
- Season the cauliflower with oregano.
- Place your seasoned cauliflower into an air fryer set at 150 degrees for about 20 minutes, or until softened and starting to brown.
- Remove the cauliflower, coat it in tomato paste, place ham on top and sprinkle 100g of mozzarella.
- Place the cauliflower back into the air fryer at 150 degrees for about 10 minutes or until the cheese has melted and started to brown.
- Serve with a side salad.
