How good do these look! Packed full of mince and veg, these low calorie stuffed capsicums taste amazing.
They’re also fun to make, so you can get your kids involved.
Serves 4
Ingredients
- 4 large capsicums (Green, red, yellow or a mix)
- 1 tablespoon coconut oil or coconut oil spray
- 600g lean beef mince
- 1 brown onion
- 2 garlic cloves
- Salt & pepper
- 1 table spoon paprika
- Chilli flakes (optional)
- 1 large carrot, peeled & diced
- 2 cups cooked Basmati rice
- 1 large tomato, chopped
- 1 cup sliced mushrooms
- 1 cup chopped spinach
- Fresh parsley
Method
- Slice tops off capsicums and scoop out all the seeds. Place in a baking dish (keep the tops)
- Pre-heat oven to 200 degrees
- Add oil to a frying pan & brown onion and garlic
- Add salt & pepper, paprika & chilli flakes
- Add the mince and break up and brown
- Add the carrot and stir through
- Allow mince to cook through and carrot to soften
- Add the precooked rice and stir through meat mixture
- Add mushrooms, spinach, tomato and parsley, stir through
- Spoon mixture into capsicums (feel free to add any extra mixture to the bottom of the baking dish around the capsicums)
- Pour approximately ¼ cup of water into each capsicum over the top of the meat. This will stop it from drying out whilst baking.
- Pop the capsicum tops on and bake for 30-40 mins or until capsicums are cooked through
