Healthy Anzac Biscuits

Let’s be honest mate. Baking’s not usually top of the list.
Most of us aren’t spending our Sundays whipping up batches from scratch. But every now and then, you just want a decent biscuit with your cuppa that doesn’t completely derail the day.
This is that.
A lighter take on a classic. Easy to make, tastes like the real deal, and won’t blow out your whole day.
Because weight loss isn’t about cutting everything out. It’s about making better choices most of the time.
Makes 20 small biscuits
Serves 10
Ingredients
- 1.5 cups rolled oats
- 1/2 cup chopped almonds
- 1/2 cup desiccated coconut
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 1 tablespoon coconut oil
- 1/4 teaspoon baking powder
- 1/4 cup water
Optional:
- 2 scoops The Man Shake (vanilla, chocolate, or whatever flavour you’ve got going)
Method
- Preheat your oven to 160 degrees.
- Throw the oats, coconut and almonds into a food processor or blender. Give it a quick blitz until everything’s combined.
- Add the rest of the ingredients, including your Man Shake if you’re using it. Blend again until it all comes together.
- Roll into about 20 small balls, then flatten them into biscuit shapes.
- Pop them onto a lined baking tray and bake for around 20 minutes, or until they’re lightly golden.
- Let them cool slightly… then go on, have one.
Man Tip
Keep a batch of these handy for when the sweet cravings kick in.
It beats smashing half a packet of something from the servo and wondering where it all went.
You don’t need to be perfect, mate. Just a bit more consistent.
